I know the OEM wheels are 8.5" x 18" and tires are 255/40 -18. Has anyone run a 265/40 -18 tire on the stock wheels ? I know the (265) tire is about .4" wider than the 255. I have an opportunity to pick up a slightly used set of snows in the 265 size. Curious to know if there will be any issues with the wider tire rubbing any where.

Overall diameter will be approx .35" bigger as well.
Should still work. Might get some slight rubbing on fender liners at extreme turning angles.

I have 265/40-18 as my winter fronts.

What size are you running on the rears ?

295/35 winter rears.
Wheels are 10 and 11 wide respectively. I don't advise replicating the setup. :)

A 295/35 is a tall tire. I was getting ready to run a staggered set-up with 255/35/19 front and 285/30/19 rear.

Staggered is not really worth it IMO. Go for 285/30 on all fours rather. It's nose-heavy, I don't like how it handles with staggered.
