Got mine from Europrice.us (http://europrice.us)
Also purchased other European items from them and got great service. I have not used them in over a year because I haven't needed to, but when I did need something always got good service.

Europrice has it listed for $2695 for the pair... I am assuming these are OEM?

Yes they are OEM.
If you were looking for BMW M4 GTS taillights it would cost you a cool $10K. I think $2.6K is a steal.

Are there any meaningful differences to the e-codes besides beam pattern (cutoff, etc.)? What I'm getting at is, would it be possible to just get some new projectors and swap them out?

Ecodes include small driving lights in the housing, Xenon driving lens diffuses the light a bit less, and the corner is missing the yellow reflector and a round protector on the indicator bulb. The indicator bulb is of a different base type as well.

RS6 Euro Headlights (ecodes):

RS6 US Headlights (clear corner mod):

The US headlights have the clear corner mod, which is the removal of the orange reflector. I did that. I think you get the details still of some of the difference.
Mostly cosmetic and for me it was worth the cost.
The US headlights come with the round hole inside the housings for daytime running lights, however it does not have a bulb. You would need to drill out the hole itself as well to get to the wiring.

In the US headlights, the turn signal is a dual-filament bulb. It turns on when you use the turn signal, and it is also on when you turn the lights on once click without turning Xenon on.
In the Euro headlights, the turn signal bulb is single filament. It is only used for turn signal. There is small bulb between Xenon and High Beam section that is the daytime running lights. These turn on with one click/turn of the dial.
