Would this setup make any sense as an upgrade from stock size wheels/tires?
19x8.5 ET 32 with 255/19/35

That will work fine. I suggest a different ET to move the wheels out more. I use 19x8.5 et 25 with 255/35/19 (yes, the last set in you op is mixed up a little)

Would it be a bad idea to add adapters to convert hub bore to 57.1 from 66.1 (newer Audi wheels)?
